
3 things I love, oats, cinnamon and raisins. Especially when they come combined in a tasty muffin.
This muffin recipe sees oats mixed in with sour cream and flour to make moist, delicious muffins.
Perfect for any time of day, I enjoyed them for breakfast, or with an afternoon cup of tea.
I love making them in these bright yellow cupcake cases, it makes me think of spring!
Oaty Apple, Cinnamon and Raisin Muffin Recipe
Ingredients
- 75 g Oats
- 150 ml sour cream
- 100 ml whole milk
- 125 g dark brown sugar
- 100 ml vegetable oil
- 50 g butter room temperature
- 2 eggs
- 2 tspn cinnamon
- 200 g self raising flour
- 100 g Californian seedless raisins
- A handful of oats to garnish- roughly 1 pinch per cupcake
Instructions
- Mix the sour cream and milk together in a large bowl, measure out the oats and allow to soak at room temperature, for 30 minutes.
- Whisk the sugar with the oil and butter on a high level until pale and creamy.
- Add the eggs to the sugar mixture and whisk well again.
- Gently add the soaked oats to the sugar mixture, and fold in until all combined.
- Sift the flour, and cinnamon into the wet mix and fold in well.
- Add the raisins and stir until evenly distributed.
- Spoon into cupcake cases, and fill to 2/3 full.
- Place in the oven at 175'C for 20-30 minutes until raised and golden.
- Sprinkle a few oats on top for decoration.

I much prefer savoury muffins - like these - to sweet ones and the combination of oats, cinnamon and raisins is gorgeous!
