Light and fluffy these Belgian waffles are a guaranteed hit!

I'm yet to make a batch that doesn't go down really well, and have everyone raving about them.

Credit to the people at Sage, who provided me with their smart waffle maker, as this waffle maker really does make epic waffles. It needs hardly any cleaning too, which is awesome.

I based this recipe on the one that comes in their instruction booklet, after all if it's good enough for Heston, then it's good enough for me!

The recipe involves splitting the whites and yolks of the eggs to create a super light and fluffy waffle, which is impressive as they can often be quite dense when I've tried them in cafes and restaurants.

I then created the ultimate comfort food waffle stack, perfect for when you're having a bad day or just need that little sweet treat. It's not for the feint hearted though! One waffle is usually just right, and two is definitely an indulgence.

Belgian Waffle Recipe

Ingredients
  

  • Waffles
  • 2 large eggs separated
  • 170 ml whole milk
  • 70 g unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 200 g self raising flour
  • 2 pinches baking powder
  • 40 g golden caster sugar
  • Chantilly cream
  • 150 ml double cream I use elmlea substitute
  • 1/2 tablespoon icing sugar
  • 1 teaspoon vanilla bean paste essence works well too

Instructions
 

  • Separate the eggs into 2 separate bowls.
  • Whisk the whites until stiff.
  • Add the sugar and vanilla to the egg yolks and whisk well.
  • Gradually add the milk to the egg yolk mix.
  • Sift the flour and baking powder into a mixing bowl and make a well in the middle.
  • Pour the egg yolk mix into the middle of the flour and whisk well.
  • Gently add the egg white mix and fold in, until all combined.
  • Pour into the waffle maker and cooker for 3-4 minutes for a light golden waffle (or longer if a darker waffle is preferred).
  • For the chantilly cream
  • Add the cream, icing sugar and vanilla paste into a bowl and whisk until thick, but not stiff.

To create the comfort food stack you will need:

A handful of strawberries, 1 waffles, a dollop or chantilly cream and a large tablespoon of nuttella.

To assemble:

Slice the strawberries and remove the tops.

Heat the nutella in a small ramekin for 30 seconds in the microwave.

Place a dollop of cream and half the strawberries over the first waffle, with a light drizzle of the nutella.

Place the second waffle on top and put the rest of the cream and strawberries on top (as shown) and drizzle the remainder of the nutella over the whole stack.
