Belgian Waffle Recipe

Light and fluffy Belgian waffles. Once you've tried these, nothing else will compare!

Ingredients
  

  • Waffles
  • 2 large eggs separated
  • 170 ml whole milk
  • 70 g unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 200 g self raising flour
  • 2 pinches baking powder
  • 40 g golden caster sugar
  • Chantilly cream
  • 150 ml double cream I use elmlea substitute
  • 1/2 tablespoon icing sugar
  • 1 teaspoon vanilla bean paste essence works well too

Instructions
 

  • Separate the eggs into 2 separate bowls.
  • Whisk the whites until stiff.
  • Add the sugar and vanilla to the egg yolks and whisk well.
  • Gradually add the milk to the egg yolk mix.
  • Sift the flour and baking powder into a mixing bowl and make a well in the middle.
  • Pour the egg yolk mix into the middle of the flour and whisk well.
  • Gently add the egg white mix and fold in, until all combined.
  • Pour into the waffle maker and cooker for 3-4 minutes for a light golden waffle (or longer if a darker waffle is preferred).
  • For the chantilly cream
  • Add the cream, icing sugar and vanilla paste into a bowl and whisk until thick, but not stiff.
