Too much champagne!
In the past year I've had a few changes in work, and got married so I have quite a few bottles of champagne in the house. This gave me the opportunity to experiment, and with strawberries being in season I decided to try making a strawberry and champagne sorbet.
Sorbet? Granita?
Unfortunately, my initial plans for a sorbet didn't work out too well! It was far too hard and crystallized to be a sorbet, but perfect for a granita - every cloud has a silver lining.
Apparently what makes a sorbet soft is the right amount of sugar, and glucose syrup helps too. So, as I didn't want to add any more sugar to the mix granita is what I settled for.
What is Granita? Granita is an Italian frozen dessert similar to sorbet but more crystalised and almost like crushed flavoured ice.
This granita is perfect as a little indulgence or even if you have people coming around and want to give them a dessert that's easy but a little bit special too. It's also great as a cocktail if you decide you can't possibly wait to freeze it.

Strawberry and Champagne Granita
Ingredients
- 1 bottle champagne or prosecco would be fine
- 1 punnet strawberries
- 4 tablespoons icing sugar halve if making as a cocktail
- 1 tablespoon glucose syrup leave out if making as a cocktail
- 350 ml lemonade
- 1 tablespoon elderflower cordial
- 1 teaspoon vanilla essence
Instructions
- Remove the tops from the strawberries and blitz in a food processor with the icing sugar, glucose syrup, vanilla and elderflower
- Place the strawberry mix in a large container and gradually add the lemonade and champagne. It will fizz so be sure to add gradually, and mix well.
- Place in the freezer overnight
- To serve take a spoon or a fork and scrape over the surface of the ice to collect the crushed ice and place in a bowl. Top with strawberries and lemon balm.

A lovely summery flavour combination. I think it would slightly pain me to us an entire bottle of fizz however!
