Tonight was one of those nights where none of us could decide what we fancied for tea, and I didn’t have all the ingredients that I needed. So I decided on a quick simple recipe for chicken satay which I normally have most of the ingredients for lurking in the cupboards. I like to call this a ‘fake-away’ night.
Ingredients
4 chicken breasts
4 Garlic cloves or 4 cubes of frozen garlic
4 cubes of frozen ginger or a thumb sized piece of fresh ginger chopped finely
A generous dash of Dark soy sauce at least 3 tablespoons (I often use more)
Juice of 1 lime
1 red chilli chopped finely, seeds included
5 tablespoons of good quality unsweetened chunky peanut butter
1 white onion sliced
1 green pepper sliced
(This is my favourite peanut butter for any satay/savoury dish by far!)
Method
So this one’s really easy; Fry the chicken in a little olive oil, add the chopped onion and pepper. Then add in the rest of the ingredients, stir and cook through for 5-10 minutes.
While the sauce is cooking through cook either rice or noodles to serve it with (whichever you have/prefer).
And Voila! Simple Satay Chicken
