
I must admit, I'm not a fan of salads!
Whether I've eaten sensibly or not, I always crave carb-loaded meals. I have a big appetite!
I do occasionally feel like a salad though. My favourite salads are those eaten on holidays, usually in Turkey where the salad vegetables are super tasty and fresh.
Back home, when I do have a salad, it needs to be special!
This fits the bill, I love plums because they're so versatile and I love the tart flavour.

This recipe makes the most of in-season rocket, and early-season plums. With added salty feta to balance the tart plums and peppery rocket.
I served this with the plums slightly warm and not long out of the oven (so had to photograph it really quickly before the leaves wilted!).
It could easily be served cold though. Just a quick note on serving the plums cold, my first batch used coconut oil, and I have also read butter is recommended for roasting plums. The only issue with this is they both solidify when cold. So absolutely only use oil, I used olive oil but if you wanted to use another vegetable oil that would be fine.
Plum, Rocket and Feta Salad
Ingredients
- 1 plum
- 45 g rocket 1/2 pack
- 7 g feta cheese 1 thin slice
- 1 g mixed seeds 1 pinch
- 1 teaspoon balsamic vinegar
- 1 drizzle balsamic glaze
- 2 tablespoon olive oil
- 1 pinch salt
- 1/2 slice bread
- 1 pinch mixed herbs optional
Instructions
- Cut the plum into 6 sections and remove the stone.
- Drizzle with 1 tablespoon of olive oil and a pinch of sea salt and place in the oven on 150 'C for 20 minutes.
- In a large bowl gently cover the rocket leaves in the balsamic vinegar, mixing with your hands.
- Dice the bread into small squares and fry in a pan with 1 tablespoon of olive oil until golden. Sprinkle the mixed herbs into the pan too, if using.
- Once the croutons and plums are cooked and ready, allow to cool slightly for 5 minutes until lukewarm
- Transfer the rocket onto your plate, and place the warm plums and croutons on top.
- Crumble the feta over, and sprinkle the mixed seeds.
- Finally dress with a drizzle of balsamic glaze.
- Eat immediately.

I always think I'm not a fan of salads either but then I eat one and am amazed how delicious they can be. Plums and other soft fruits in salad add a wonderful sweetness.
Yes, they have to be fresh and something special in them I find. I love a bit of fruit in them too... and cheese! not so healthy then though!
