Homemade pink lemonade ice lollies recipe

I always get over excited when buying lemons, a bit like Jamie Oliver (anyone else notice he seems to LOVE lemons?). Recently I had a few lemons leftover, and a handful of raspberries so decided to make homemade lemonade for a picnic we were planning.

This made 1 1/2 litres of lemonade, some of which was left over so I put them into ice lolly trays. The pink lemonade ice lollies were fantastic! So refreshing and easy, and what's more no waste either!

While researching how to make the lemonade, I read some recipes that stated it was OK to just use a fine sieve to get rid of any lemon peel leftover. I tried this and found it too bitter as it didn't get rid of some of the pith that had gone into the lemonade. So my advice would be to:

1) Use a muslin cloth to drain the lemonade, it's slow but worth it.

2) Be very careful when cutting the peel from the lemons to avoid as much of the white pith as possible.

Homemade pink lemonade recipe

Refreshing home made pink lemonade, which also freezes very well into ice lollies.

Ingredients
  

  • 4 lemons
  • 140 g caster sugar
  • 1/2 punnet of raspberries
  • 1.5 L cold water

Instructions
 

  • Carefully remove the peel from the lemons and place in a food processor along with the sugar and 1/4 of the water.
  • Remove the white pith from the lemons to leave just the fruit segments.
  • Add the fruit segments, and raspberries to the food processor.
  • Blitz in the food processor for 10 seconds.
  • Drain the mixture through a muslin cloth over a sieve and collect in a jug.
  • Dilute the lemonade mix with the rest of the water.
  • And serve, freeze any leftover in ice lolly moulds overnight.
