Ghostly Eton Mess Recipe

Have fun with this spooky twist Eton Mess, using raspberries and ghostly meringues. A perfect ghoulish Halloween recipe!

Ingredients

Meringues

  • 3 eggs
  • 200 grams caster sugar
  • 1 tspn lemon juice
  • 24 cake pearl sprinkles

Raspberry Sauce

  • 300 grams rasberries
  • 4 tbspns rum
  • 3 tbspns icing sugar

Chantilly cream

  • 300 ml double cream
  • 1 1/2 tspn vanilla bean paste
  • 2 tbspn icing sugar

Method

  • For the meringues you will need a clean, grease-free mixing bowl and electric whisk.
  • Separate the eggs, keep the whites and place the yolks to one side for a later date (usually I keep them for custard).
  • Start whisking the egg whites, and once they start becoming frothy start adding the caster sugar gradually as you mix. Also squeeze in a teaspoon of lemon juice.
  • Continue to whisk until the meringue mix is white, glossy and stiff.
  • Place in a piping bag (or a ziplock sandwich bag if you don't have one, once filled cut a small corner off, and pipe away). Pipe a circle around 4 inches diameter, and fill in the gap with the meringue to provide a decent base. Then continue to pipe in a spiral upwards to that you get a little cone shape.
  • Take 2 pearl sprinkles used for cake decorations per ghost, and place at the top to look like eyes.
  • Bake on a low temperature, as low as your cooker will go (ideally less than 100'C) for 4 hours.

Raspberry sauce

  • Select 3-5 raspberries per serving and set to one side for the final building of your Eton mess stack and place in the freezer for a few hours. Place the remaining raspberries in a pan, with the rum and icing sugar and boil on a high heat until the raspberries have blended into a sauce and thickened. This should take around 5 minutes.
  • Sieve through a fine sieve into a jug to remove the seeds. Run the back of a dessert spoon against the sieve to help extract the most sauce from the cooked raspberries.

Chantilly cream

  • Place the cream, vanilla paste and icing sugar in a bowl and whisk with an electric whisk until it just starts to thicken. You don't want it too stiff, just thick enough to hold it's shape.

To assemble

  • In a tumbler sized glass (or goblet for more fun) place 2 tablespoons of chantilly cream, on top of that drizzle 2 tablespoons of the raspberry sauce. Take 3-5 frozen raspberries and place top down on top of the cream, this makes a perfect podium for your little ghosty! To finish dust with icing sugar, and allow your guests to smash the meringue into Eton mess themselves... mwahaha

More About the Recipe

Although fairly simple these mini eton mess certainly pack a punch in the flavour department. The trick is getting the right balance between the sweetness of the meringue and the sharpness of the raspberries.

Then, the secret is to use chantilly cream instead of just plain old boring whipped cream 🙂

The vanilla in the chantilly cream really helps bring all the components together and adds an extra flavour to the mix.

Goodbye Summer... Hello Autumn

So that's it. Summer is officially over here in the UK. Not that we had much of one, to be honest. I think if you blinked you would have missed it!

Although we're having some lovely autumnal weather at the moment, so it's not all bad.

What it does mean though is that the nights are drawing in, and the weather is getting colder. With autumn comes the opportunity to start cooking some indulgent recipes full of warm spicy flavours.

Although they're for another post.

A Fun Halloween Recipe

Today it's all about the first of two fun days for foodies – Halloween. The other of course being Bonfire Night – again that's for another post.

Now, I'm not normally one for themed or crafty type food. I don't really have the patience for the decorating.

However, this ghostly eton mess is definitely a step in that direction. Albeit a toe dipped in the water rather than diving in at the deep end.

And I must say they were fun to make – even if they did end up looking more cute than scary!

Gooey and Crunchy Eton Mess

Part gooey, part crunchy, it goes without saying the textures in Eton Mess are the fun part.

And with this recipe, the fun levels are taken up a notch or two!

As the meringue ghost is served whole you get an extra Halloween treat of mashing him up into the cream and blood red raspberries. Gruesome!
