
This is the perfect recipe to ease you in to 2016. It's easy to make, super healthy and can be taken to work as a low cost lunch. It also fits the bill if you're trying out 'veganuary' this year, as it contains nothing but veggies!
What's more, all the root vegetables make it really filling, so you'll have plenty of energy to get you through the struggle that are the first few weeks back in work after Christmas.
As this is a vegetarian recipe, it helps keep the cost down. Christmas is always a bit crazy on the meat front so it makes a nice change too.
This is one of those recipes that tastes better the next day, once the vegetables have started to fully soften which thickens the stew. It keeps well for up to three days, so is great for taking leftovers to work.
It also freezes really well so make sure you put any leftovers in the freezer for a rainy day!
I cooked this in my awesome slow cooker come pressure cooker called the Fast Slow Pro from Sage. I used the pressure cooker setting and it was all cooked and ready to go within 45 minutes and even had that next day flavour!

Peppery Root Vegetable Stew
Ingredients
- 1/2 medium butternut squash
- 3 small leeks
- 1 small swede
- 4 parsnips
- 1 small celeriac
- 750 ml vegetable stock I used bouillon
- salt and pepper
Instructions
- Peel and chop the veg, apart from the parsnips
- Peel the parsnips and blitz in a blender until finely chopped
- Boil 750ml water and add your vegetable stock- to packet instructions
- In a large pan add the chopped vegetables, parsnips, and add the vegetable stock.
- Put on a medium heat until it starts to simmer slowly, then leave cook on low for around 2 hours.
