Parmentier Root Vegetable Recipe

Super simple and tasty garlic parmentier root vegetables,

Ingredients
  

  • 500 g of a mixture of potatoes parsnip and celeriac
  • Garlic oil or 1 garlic clove and a teaspoon of olive oil
  • Generous pinch of salt
  • 1/2 teaspoon of mixed herbs

Instructions
 

  • Peel and dice your vegetables into small cubes around 1.5cm thick. Don't worry too much about what proportions of vegetables you use. This recipe is designed to be good at using up stray root vegetables you may have in the cupboards. Ideally you want to be aiming for roughly equal amounts of each.
  • Par boil them, by adding them to a pan of cold water with a pinch of salt. Heat on a medium heat on the hob, and as soon as it starts to boil remove and drain.
  • Dry the cubes well with a kitchen paper towel.
  • In a large bowl add the garlic oil, salt, herbs and vegetables and min well*
  • *If you don't have garlic oil, take your garlic close and crush finely in a pestle and mortar and then add the tablespoon of oil. Mix well and poor over the vegetables.*
  • Place in the air fryer for 25 minutes at 180'C, checking half way through and giving the tray a little shake.
