This recipe was born from numerous experiments with all my favourite chinese sauces and spices, and in the end the simplest combination won! It's incredibly simple, cheap and tasty. I use whatever meat I have in the house; pork, turkey, chicken, steak and even leftover meat from a roast. I also use whatever veg I can find. The supermarket 'stirfry mixes' are generally pretty good, cheap and cut down preparation time but fear not if you don't have it to hand! I would normally aim for onions and peppers as a minimum, including carrots, mushrooms, beansprouts, broccoli and cabbage (the list goes on!) if I have them. It's a good all round 'fridge-raiding' type recipe; add whatever veg or meat you have to hand, or make it to use up leftovers. It's also incredibly quick! I can genuinely make it in 15 minutes 😉
You will need:
A large wok (if you have one-just use a large saucepan if you don't)
A large pan for boiling the noodles.
Ingredients (see above)
Stirfry vegetable mix OR a combination of peppers, beansprouts, carrots, mushrooms, cabbage, and broccoli. (whatever you have/prefer)
Meat; pork loin, beef steak, chicken breast, turkey breast, leftover roast.
3 tablespoons oil - I prefer sesame oil for chinese cooking (although I know some people don't like to cook with it I find it works OK for me)
4 tablespoon Dark soy sauce
A medium chunk of ginger (about the size of a thumb) if fresh OR 3 cubes of frozen ginger
3 garlic gloves crushed OR 3 cubes of frozen garlic
1 medium sized chilli (red or green) seeds in if you like it HOT, deseeded of you don't, I tend to remove half the seeds for somewhere in the middle!
(secret ingredient time) 2 teaspoons HOT sweet chilli dipping sauce (I use blue dragon)
1 packet of medium egg noodles ( 1 1/2 sheets gives one generous portion)
Method
Heat the oil in the wok
While the oil is heating chop your meat into small strips
Add the meat to the hot oil in the wok
Add the garlic and ginger
Finely chop the chilli and add to the meat
FINELY chop the veg (or open the bag of supermarket mix!)
Boil a kettle of water ready for the noodles
Add the veg to the wok
As soon as the veg has been added pour the hot water over the noodles in the large pan and bring to the boil
Add the soy sauce and the sweet chilli sauce
The noodles should take approx 3-4 mins so by the time they're ready the stirfry should be ready (if you chopped your veg finely enough).
Drain the noodles and add to the wok, then mix together.
And it's ready! - Enjoy!
