Soft, fluffy gluten and lactose free pancakes that can be transformed into either a sweet or savoury version with ease.

Ingredients
  • BASIC RECIPE
  • 2 cups gluten free (GF) flour
  • 1 teaspoon GF baking powder
  • 1 pinch sea salt
  • 2 eggs, lightly beaten
  • 1 to 1½ cups* milk of your choice - (I use lactose free)
  • 1 tablespoon butter / ghee / coconut oil (for cooking) + more as needed
  • VARIATIONS TO ADD TO BASIC MIX
  • SWEET
  • ½ cup sugar of your choice - (I use Rapadura)
  • 1 teaspoon ground cinnamon
  • BANANA
  • 1 medium ripe banana, mashed
  • ¼ cup sugar of your choice
  • 1 teaspoon ground cinnamon
  • BERRY
  • ⅔ cup fresh or frozen berries - (blueberries &/or raspberries are great!)
  • ¼ cup sugar of your choice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon finely grated lime zest
  • CHOCOLATE CHIP
  • ¾ cup dark chocolate chips
  • SAVOURY
  • 1 teaspoon turmeric powder
  • GINGER
  • 1 teaspoon turmeric powder
  • 1 teaspoon finely grated ginger, or ½ teaspoon powdered
  • A good grind black pepper
Method
  1. BASIC RECIPE
  2. In a large mixing bowl, sift the gf flour, baking powder and salt.
  3. Add the lightly beaten eggs and 1 cup of milk and stir until combined. Check the consistency, you want the batter to run smoothly, but have some thickness, like maple syrup. If it is too think gradually add more milk until you are happy.
  4. VARIATIONS
  5. Add your preferred ingredients as listed in the variations above.
  6. Stir to combine.
  7. COOKING
  8. Using a non stick fry pan over medium high heat, melt butter / ghee / coconut oil.
  9. Pour or ladle pancake batter into pan to preferred size.
  10. Allow to cook through until you see bubbles form & pop on the top, then flip pancakes & cook until golden brown.
  11. Serve immediately - (see Notes for ways to serve)
Notes
* - Gluten free flours can vary greatly in how absorbent they are, so go slow with adding liquid. Start with 1 cup, then add more if needed.

SERVING SUGGESTIONS
We love to make the basic sweet version of the mix & then set the table with a variety of choices in the middle - berries, jam, honey, maple syrup, bacon, yoghurt, lemon, sugar. So many choices!

The savoury ginger & turmeric mix is a fabulous bread alternative & can be used to make a 'pancake-wich', sandwiching your favourites in the middle - avocado, cheese, tomato, ham, chicken. Again, so many choices!
My personal favourite is to top a pancake with tomato, fresh basil & lactose free cheese, then set it under the grill until the cheese is melted & golden. Delicious!
