Oh how I love a good pancake – soft and fluffy with just a little bit of a crust on the outside. YUM! It is our Sunday morning family breakfast, one we all look forward to and have no hesitation in indulging in! I was quite perturbed when finding out gluten was an issue for me, one of the first thoughts that went through my head was, “what, does that mean I can’t have pancakes!?!”
Seriously, it was. Once a foodie … 🙂
Anyway, I have since come to learn, though some trial and a few errors, that it is absolutely possible to make a fabulous gluten free pancake that is just a divine and versatile as the more traditional version. Can’t tell you how happy that made me! Life without pancakes, well, it just doesn’t bear considering!
